The leading Antibes crew agency, YPI Crew, is honoured to bring yacht chefs this very opportunity in a unique collaboration with Ducasse Education, the culinary training school of global super-chef, Alain Ducasse.

“Secrets of Culinary Excellence on an International Yacht” returns to the French Riviera in 2015 between the 26th and 30th of October, where chefs will train under the careful tutelage of one of Alain Ducasse’s elite chefs. As in past years, the training will take place onboard the beautiful yacht White Rose of Drachs in Cap d’Ail.

The theme for this year’s series is “Techniques and Creativity for Outstanding Snacking’ and will incorporate two separate modules: savoury and sweet. Chefs can enrol in one or both courses- but be quick as enrolment is closing very soon and places are extremely limited.

26th-28th October: “Savoury Snacking’ is an intensive 3 day module to upgrade the knowledge and techniques of experienced yacht chefs, allowing them to stay ahead of contemporary snack trends to impress their discerning yacht guests. The training will include mastering culinary techniques, optimising time preparation, working on taste and texture associations and preparing exceptional garnishes. Using seasonal, natural and authentic ingredients, students will learn to prepare, cook and plate gourmet and innovative snacks with the legendary creative touch of Alain Ducasse.

Course cost: €1,630 excluding VAT.

29-30th October: “Sweet Snacking’ is a comprehensive 2 day course in the prestigious desserts and refined sweet snacks that Alain Ducasse is so famous for. Including sweet preparation, petit fours and finger food, the module also covers cost control, pastry preparation and assembly, and how to use those pastry bases to create a wide range of desserts that could feature on a sweet trolley. These original, beautiful and delicious desserts will add an exceptional flair to a yacht chef’s repertoire.

Course cost: €1,070 excluding VAT.

Who is Alain Ducasse and what is Ducasse Education?

The name of Alain Ducasse on a CV opens doors in the yachting world, and no wonder. This global superchef is best known for his signature restaurant, the Louis XV Alain Ducasse restaurant at the famed Hotel de Paris in Monaco.
